
This is one I found on a healthy-living site. I'm not going to post the URL, since they have rudely canceled my account with them, instead of sending me a renewal notice when the year was up.... so I'm a little miffed with them at the moment. Maybe I'll give their name later. Anyway, this soup has *bacon* in it, and it's still on a healthy recipe site! That's PROOF that bacon MUST be a superfood! ;) Hurray!
2 tsp olive oil
1 onion, chopped
4 garlic cloves, chopped
8 slices smokey bacon, chopped and the fat removed
1 pint chicken or vegetable stock
1 400g tin chopped tomatoes
1 tbsp tomato purée
1/2 cup dried red lentils
1 handful each fresh parsley and fresh basil
salt and pepper to taste
Heat the oil in a pan and gently cook the onion and garlic for 3-4 minutes or until softened. Add the bacon and cook for a further three minutes. Pour over the chicken or vegetable stock, and add the tomatoes. Stir in the lentils. Cook for ten to fifteen minutes. Stir in the parsley and basil, and season to taste. Serve with a salad or some crusty bread. This also freezes really well so you can take a portion for lunch!
