This one has been growing on me. It's something I made once, and thought it was a waste of time. The Husband couldn't get enough of it, and so I had to make it again and again. I think I've finally gotten it to where I want it now, so that we can both enjoy it. But I have to say, it's nice to have a fan of my cooking - one who sees potential in dishes that I wouldn't normally make again, but has suggestions on how to make them even better!
It involves lots of roasted veg. Chop a bunch of red and yellow peppers, courgettes, blanched potatoes, and chunks on onion, and roast them in the oven with some olive oil for around 20 minutes. When it comes out, throw in a couple of tins of sardines in tomato sauce. Close your eyes as they go in - they look like real fish bodies - ew. Mash them up, then throw in a few handfuls of grated cheddar.
When this is all finished, pour them over some lightly toasted opened paninis. (We've been eating luxurious paninis from Somerfield lately - normally 30p, they reduce them at the end of the night to 7p! Oh glory days!) Pour a few glugs of tabasco sauce over top, and sprinkle with a few handfuls of fresh chopped coriander.
It's the cheddar and tabasco that make this dish, I think... so put as much as you like. It feels very Spanish, so I always try to serve it with a big glass of Rioja or Tempranillo.
If you're really rushed, Marks and Spencers do a bag of Mediterranean roasted veg and potatoes that you could throw in the oven and skip the whole chopping thing. For £1.49, it's sometimes worth not chopping. Sometimes.
